Well lets see last night i was super tired, I think it was the gnocchi making that took it out of me. Also walking and being more active
Sweet Potato and ricotta Gnocchi
Ingredients
# 1 1/3 lbs sweet potato, peeled and quartered
# 1 cup ricotta cheese
# 1/2 teaspoon salt
# 1/2 teaspoon ground nutmeg
# 2 cups all-purpose flour
Directions
1In large saucepan, cook sweet potatoes, covered, in enough boiling salted water to cover for 25-35 minutes (until tender).
2Drain well; return to same pan. Over low heat, mash potatoes until smooth allowing any extra moisture to evaporate.
3Transfer potatoes to a large bowl. Stir in ricotta cheese, salt, nutmeg, and 1.5 cups of flour.

On a well-floured surface, knead in the remaining .5 cup flour, kneading for 2-3 minutes or until a soft dough ball is formed.

Divide into 8 pieces and roll each piece into a 12" long log (1" in diameter).

Cut into 1" pieces & w/ a floured finger, make a dimple in the center of each piece.

Boil a large pot of salted water. Cook gnocchi, in small batches for 3-4 minutes, or until they float to surface of water (Careful not to overcook).

Remove w/ skimmer or slotted spoon & drain on paper towels or tea towel.

Cover to warm while making rest of gnocchi.

and the burnt butter sage sauce
Burnt butter and sage sauce

INGREDIENTS
100g butter
10 sage leaves
1 tablespoon lemon juice
METHOD
Add butter to pan and heat until butter begins to foam. At this point, add the sage and cook until butter has browned. Squeeze in the lemon juice and serve sauce immediately over ravioli.

It tastes absolutely heavenly. U put a heap of parmasen with it and its delicious. Its great to make too. Better to make your own if u have time than to buy store bought plasticky stuff from the supermarket. I have been a bit slack with this blog over the past few days.
I have had restless sleep. Expcept for last night where i just slipped into sleep and woke up in the morning. I like it when i come round and there is sun slipping through the curtains.
