Stones Throw Wednesday

Its been an early morning.. did what i had to do early this morning.. got a parcel from my brother... for both mum and I... will open it when she gets home. I am listening to the Beatles.. just am. I went to shop at the small produce store... they didnt have anything i needed other than spinach.. so i ended up going to safeways. Just when you want to support the "little guy". I'll have to get tam to send me some more of that ginger tea. It is so delicious, warms the insides up.

So now i am here with a nice tea and tap tap tapping away a tap tap tapping. Now for the recipe most likely from better homes and gardens:


SPINACH PIE

450g frozen english spinach, thawed
500g fresh ricotta
200g fetta cheese, crumbled
shreeded rind of 2 lemons
salt and pepper
oilive oil/cooking spray
9 sheets of filo pastry

1 pre heat oven to 200c Use hands to press liquid from spinach then put into a medium size bowl add ricotta, fetta eggs rind salt and pepper stir well until combined.

2 line a lamington tin (im usin a pie dish) fold 6 shets of pastry in halves and spray with cooking spray. Lay one sheet of pastry in tin, coverin half the tin lengthways with pastry overlappng on sude at each end. Put other sheet of pastry iver remaining half of tin with pastry iverlapping on the otherside and at each end, Repeat with another 4 sheets of pastry

3 Put filling in Pastry line tin smooth out the filling fold remaining 3 sheets of pastry in halves, spray with cooking spray and put over flling. Fold in pastry on sides an ends. Apray pastry with olive oil Bake for 10minutes on high then reduce heat to 180 and bake for a further 25/ 30minutes until golden and crisp and cooked through.

I will see if it turns out. Perhaps ill go easy with the lemon rind! Maybe tweak it a bit.
