Corn Fritters

Basic Corn Fritters (Donna Hay)

1 cup self raising flour
2 eggs
20grams butter melted
1/3 cup milk
salt and pepper
400grams can corn kernels,drained
3 green onions (scallions) chopped
vegetable oil for shallow frying
lemon wedges to serve

Place the flour , eggs, butter, milk, salt and pepper in a large bowl
and whisk to combine.

Fold through the corn and green onions.

Place two table spoons of the oil in a large frying pan and heat over medium heat
\Add 1/4 cups of the mixture to the pan cook for 1 to 2 minutes each side or until bubbles
appear on the surface. Set aside.

Add another two tablesspoons of the all and repeat with the remaining mixture.

Serve with lemon (serves four)


These are great with the sweet chili and lime yogurt dip I make. Or with just a bit of sweet chili sauce. I havent made these in a long time. I know Roman loved them. They taste yum.
